    Sundried Tomato Omelet Recipe

    Ingredients:

    3 eggs

    1 Tsp. water

    Salt and pepper to taste

    2 Tbsp. goat cheese

    ½ cup fresh spinach

    2 Tbsp. sundried tomatoes, chopped

    Preparation:

    1. Coat frying pan with butter and warm over medium-high heat.
    2. Mix eggs with water, salt and pepper. Add to pan.
    3. When eggs begin to set, add the goat cheese, spinach and sundried tomatoes to half of the eggs.
    4. Fold in half and cook until eggs are fully set and cheese is melted.
