    Serves 6

    Roasted Cauliflower RecipeIngredients:

    • 1 large head cauliflower, rinsed and cut into small pieces
    • 1 tablespoon extra virgin olive oil
    • 2 tablespoons Parmesan cheese
    • 1 tablespoon salted butter
    • 2 garlic cloves, minced
    • 1/2 cup crushed almonds
    • 1/4 cup panko breadcrumbs
    • 1 teaspoon crushed chilies
    • 1 teaspoon chili powder

    Directions:

    1. Heat oven to 425 degrees F.
    2. Spread cauliflower on a baking sheet. Drizzle olive oil over cauliflower and sprinkle on cheese. Roast in the oven for about 20 minutes.
    3. Meanwhile, melt butter in skillet, saute minced garlic for about 1 minute. Turn heat to low, stir in almonds and breadcrumbs, cook until golden brown. Add the crushed chilies and chili powder.
    4. Sprinkle almond breadcrumb mixture over roasted cauliflower to serve.
