    Sizzling Fajitas Recipe

    Sizzling Fajitas RecipeIngredients:

    • 2 teaspoons extra virgin olive oil
    • 1/2 white onion, sliced
    • 1 red bell pepper, sliced
    • 2 cloves garlic, minced
    • 1 teaspoon sea salt
    • 1 teaspoon freshly ground pepper
    • 2 whole chicken breasts, sliced into strips
    • 1 14 oz can black beans, drained and rinsed
    • 1/2 cup salsa
    • 1 teaspoon chili powder
    • 1 teaspoon cumin
    • 1 teaspoon paprika 
    • 1 teaspoon turmeric 
    • 1/2 teaspoon crushed chilies
    • 1/4 cup nonfat sour cream
    • 4 whole-wheat tortillas, 7″-8″ in diameter, corn or spinach
    • 1 cup shredded low-fat cheddar cheese
    • 1 avocado, diced
    • Shredded lettuce

    Directions:

    1. Heat olive oil in a medium skillet. Add onion, pepper, and garlic and saute briefly. Season chicken with salt and pepper, add the chicken to the skillet and reduce heat to medium. Saute until no longer pink, about 10 minutes.
    2. Stir in black beans, salsa, chili powder, cumin, paprika, turmeric, and crushed chilies. Saute for 5 more minutes or until boiling.
    3. Spread 1 tablespoon sour cream in a thin layer on each tortilla. Divide the meat mixture on top of tortillas, sprinkle each with cheese, avocados, lettuce, wrap, and serve sizzling hot!
